I made these KNEE SLAPPIN’ GOOD BLUEBERRY MUFFINS tonight with a few minor adjustments (namely, more chia seeds, rice flour replacing almond flour, apple mango purée instead of apple sauce and a dash of cinnamon), and I have to say, they are the best vegan, gluten free muffins I’ve had, and I’ve tried *a lot* of muffin recipes.
