If you are like me, you love good bread, but are not so interested in eating the bad stuff. Unless you are gluten intolerant or have an allergy, the good news is that bread made from whole and organic ingredients is teaming with nutritional value!
Whole grains have been a part of the human diet for tens of thousands of years, and apparently lower the risk of diabetes, heart disease and high blood pressure. Nutritionally they are full of fiber, vitamins and minerals like B, zinc, iron, magnesium and manganese. This particular bread is full of protein due to the nuts and seeds.
Remember, make sure whatever you buy is organic, whole grains with no added sugar or refined grains.
flour, approximately 600 milliliters
4 tsp dry yeast
2-3 tsp salt
approx 2 Tbsp organic quality honey or agave nectar
handful or more of walnuts / hazelnuts
6 or so pitted dates chopped rough
Start by mixing the flour, yeast and salt together with honey or agave and water. Consistency is very important, you might need to add more flour if it is very sticky and moist. Please use hands to mix, once consistency is able to hold together into a ball without sticking to the bowl too much it should be ok.
Cover and set aside for approx 1 hour whilst dough rises (find a warm spot, a place near an open fire is perfect). Split loaf into smaller shapes to bake, size of a large grapefruit or small melon to ensure the bread is well cooked through. Bake in preheated oven about 195C for 20-25 minutes.
